A random but inspirational visit to Dublin by George and his Austrian wife on one of their many trips back to Europe, found them strolling through an area that brought them back in time to the original old Manhattan location. Here they were in late 80s Temple Bar with its quiet cobbled streets, old warehouses, empty pubs and a vintage premises that once housed a Victorian apothecary. Perfect!

They couldn’t believe how similar the two areas were and immediately had the brilliant notion of expanding the herd beyond New York.

Our Dublin doors opened just in time for Christmas 1989, and by the following Spring the queues had already started for our fabulous food and amazing atmosphere. Outside the world has greatly changed, but inside our well worn swinging doors we try to keep things just the way they were.
